Is Desalinated Tap Water Safe to Drink?
Yes: desalinated water that is properly treated and remineralized is safe to drink and meets WHO drinking water standards. Entire nations run on it — Israel draws most of its domestic supply from the Mediterranean, and Qatar depends on desalination almost completely. The engineering questions were solved decades ago; what varies by country is the last mile of distribution.
How Seawater Becomes Tap Water
Two families of technology dominate. Reverse osmosis (RO) — now the standard for new plants — forces seawater through semi-permeable membranes at 55–80 bar of pressure, leaving salt and virtually everything else behind. Modern plants recover energy from the pressurized brine stream, cutting power use to a fraction of early designs. Multi-stage flash (MSF) and related thermal methods boil seawater under successively lower pressures and condense the vapor — energy-hungry, but well matched to Gulf states where desalination pairs with power stations, which is why MSF still supplies much of the Arabian Peninsula's older capacity.
Either way, the output is exceptionally pure — purer than most natural freshwater. Counterintuitively, that purity is the one “problem” that remains to be engineered around.
Why Remineralization Matters
Freshly desalinated water is close to distilled: almost zero calcium, magnesium, or carbonate. Such water tastes flat, and — more importantly — it is aggressive, corroding pipes and leaching metals from plumbing on its way to the tap. So every competent plant remineralizes: typically by passing water through limestone (calcite) beds or dosing lime and CO₂, restoring hardness, alkalinity, and a stable pH before distribution.
The WHO has also examined the nutritional angle: people in desalination-dependent regions get less calcium and magnesium from water than populations drinking naturally mineralized supplies, and WHO guidance encourages remineralization partly for this reason. It's a genuine consideration at the margins — drinking water can supply a meaningful slice of daily magnesium — but diet dominates mineral intake, and no health authority considers well-run desalinated supplies harmful. Does It Taste Different?
Somewhat, and detectably to sensitive palates. Even after remineralization, desalinated water tends to sit at the low end of the mineral scale — often 100–300 mg/L TDS, within the WHO's “excellent palatability” band (see our TDS guide) but lighter-bodied than limestone groundwater. Some drinkers describe it as clean and neutral; others as slightly flat. Thermal-plant water historically carried more taste complaints than RO water.
Blind tests in Israel and Singapore have found most consumers can't reliably pick desalinated water from conventional supplies — and boron and bromide, early chemistry concerns for RO seawater, are managed to guideline levels in modern plants with second-pass treatment.
The Countries That Run on It
Desalination is no longer a niche backup; it's the primary supply for several nations:
- Israel — roughly 80% of domestic tap water comes from five large Mediterranean RO plants, a two-decade build-out that turned chronic scarcity into surplus.
- Qatar — effectively 100% of municipal supply is desalinated; the country has almost no natural freshwater.
- UAE — the large majority of drinking water, from some of the world's biggest plant complexes.
- Malta — around 60% of potable supply from RO, blended with groundwater.
- Cyprus — heavily desalination-dependent for urban supply after repeated droughts.
- Singapore — desalination is one of the “Four National Taps,” alongside NEWater, ultra-purified recycled water that exceeds WHO standards and shows where this technology family leads.
Spain, Australia, California, and Saudi Arabia all operate major capacity as well. Hundreds of millions of people drink desalinated water daily.
So Why Do Locals in Some Countries Still Buy Bottled?
Here's the apparent paradox for travelers: the water leaving Gulf desalination plants meets WHO standards, yet bottled water remains the cultural default in much of the region. The reason is rarely the plant — it's the last mile. In hot climates, water is commonly stored in rooftop tanks that can run warm and go years between cleanings, and older building plumbing adds its own risks. Taste preferences, habit, and low bottled-water prices do the rest.
Practical translation: in Israel and Singapore, drink the tap.
